This Authentic Indian sweet, called Makmal Poori which means Velvety tortilla is so colorful & delicious which looks like a feast to the eyes. It attracts all the guests and it’s definitely a show stopper. The taste of this Makmal Poori makes you go for seconds.
The Poori is made with All purpose flour mixed with some yellow color for that brightness and then fried and dipped in sugar syrup and then filled with peanuts and dry coconut and folded into a half-moon and then decorated with different colors of coconut and garnished with some rose petals on the top. ,
Makmal Poori is one of my childhood favorites. Traditionally it’s made with roasted peanuts and dry coconut. If you are allergic to peanuts, you can always use dry fruits such as cashews, almonds, and pistachios which are roasted. Dry fruits add a richer taste to the sweet. Do try it out on a festival day and enjoy the taste of it with your friends and family.
MAKMAL POORI
This is one of my favorite sweet which my mom used to make all the time. Its so colorful with stuffing on the inside and colorful coconut flakes and rose petals on the outside.
For the pooriIn a bowl add 1.5cups of All purpose flour, a pinch of salt , 1/4th Tsp of yellow food color and 2 tbsps of hot oil and mix well. Add water gradually and mix it like a roti dough. Cover it and keep it aside.
For the SyrupTo a sauce pan add 2 cups of Sugar with a cup of water , a pinch of yellow food color and let it boil for 5min or until it reaches to a single thread consistency. Turn off the flame & add 1/2 tsp of cardamom powder and a few drops of lime juice. Lime juice helps in preventing the sugar syrup from crystalizing. Keep it aside.
Heat oil in a pan . Now make the dough into small balls and roll them like poori's. when the oil is hot , fry the poori's for a min on both sides and put them directly in the sugar syrup. Flip them on the other side for 2min and take them into a plate draining the excess syrup. Note: While frying the poori's , make sure u dont fry them for a long time. The poori should be soft and flexible to bend.
For the fillingTake 2 cups of roasted & peeled peanuts and grind them coarsely in a blender. To this add a cup of dry coconut flakes , 1/2 tsp of cardamom powder and mix well. To this mixture add the remaining sugar syrup and mix it to get everything together.
Now that the poori's and filling are ready, lets make the sweet ready. Take a poori and fill in the peanut & coconut mixture on half side of the poori and close the other half to form a half circle . Now fill all the poori's and keep it aside.
For the DecorationTake 3 tbsps of coconut in 3 seperate bowls ( a tbsp in each bowl) . Add a drop of red & green food color in two seperate bowls and keep one tbsp white. Mix them and leave them for a minute. Make sure u a wear gloves while mixing the food color.
Now garnish the colored coconut on to the poori's and some rose petals on the top.
