            Instant pot chicken curry is so tasty and spicy with rich creamy gravy. Using cashew nuts as a special ingredient, this curry gets its creamy and mouth-watering gravy which goes well with pulav, bhagara rice, roti, phulka, naan, and even vada which is served in some parts of south India. 

                    If you are allergic to nuts, you can use poppy seeds & grated coconut/ coconut milk.  This curry is so easy for beginners who are using instant pot & minimum ingredients from your kitchen.

Ingredients

  • 2 lbs. Chicken whole cut
  • 1 onion chopped
  • 4 tbsp. Cilantro chopped
  • 1 tomato chopped
  • 2 Green chillies chopped
  • Salt to taste
  • 2 tsp chicken masala
  • 2 tsp Red chilli powder or as required
  • 4 tbsp. Oil
  • 3 tbsp. cashew paste
  • 1/2 tsp Turmeric powder
  • 2 tbsp. Ginger garlic paste
  • 2 pieces cinnamom
  • 4-5 pcs cloves
  • 2 pcs cardamom
  • 1 pcs bayleaf
  • 1/4 tsp. Garam masala

Instructions

  • Set the instant pot on saute mode
    Chicken Curry Step1
  • Add 4tbsps of oil or as required and let it heat for a 3min. Add whole spices ( cinnamon, cloves, cardamom, bay leaf ) and saute for a min.

  • Add onions and green chillies and saute until golden brown. Add turmeric & ginger garlic paste and fry them for a min.

  • Add chicken pieces & a chopped tomato , salt to taste and mix it well. cover it with a lid & saute for 5min.

  • Stir couple of times whie the chicken is cooking and add red chilli powder. Add a cup of water & mix well.

  • Close the lid & cancel the saute mode. set on poultry mode for 5min. Open the lid after natural pressure release.

  • Turn on saute mode and add cashew paste , chicken masala and mix well. Let the gravy thicken until your desired consistency for 5-10min.

  • Add cilantro , garam masala & mix well.

  • Chicken curry is ready to be served with rice/roti/ poori/ vada/ pulkhas/ naan.
