Instant Pot Sambar Recipe

                                Sambhar, a spicy, tangy dish loaded full of vegetables. It’s popularly known to be a south Indian dish, which is mostly found all over India and around the world.

                           Making a good sambhar is not so easy but we made it easy for you with the instant pot.  If you have the cooked dal ready, it can be done in no time.  You don’t need to babysit or take a long time to make the sambar.

Follow my steps and make a restaurant-style sambhar at home and impress your friends and family. I Will sure post my recipe for sambar powder & You will never need to buy storebought sambar powder again.

TIP: IF YOU ARE ADDING OKRA TO THE SAMBAR, MAKE SURE TO ADD IT BEFORE YOU CLOSE THE LID, SO THAT IT DOESN’T OVERCOOK.

Equipment

Ingredients

  • 1 cup TOORDAL/MASOOR DAL
  • 1 tsp MUSTARD SEEDS
  • 2 tsp CUMIN SEEDS
  • 3 pieces DRY RED CHILLIES
  • 5 pieces GARLIC CLOVES
  • 2 stems CURRY LEAVES
  • 1/4 tsp HING
  • 1 cup VEGGIES of your choice
  • 1 Onion Cut into big chunks
  • 2 Carrots
  • 1 cup Opo Cut into bug chunks
  • 2 DRUMSTICKS Each cut into 3 to 4 pieces
  • 2 TOMATOES
  • 2 CHILLIES
  • 1/4 cup CILANTRO
  • 1/2 tsp TURMERIC POWDER
  • 1 tsp CHILLI POWDER
  • 3 tbsp Sambar Powder
  • 4 tbsp TAMARIND PUREE
  • 1 tbsp JAGGERY
  • 1 tbsp COCONUT POWDER
  • Salt as needed

Instructions

  • SOAK TOOR DAL FOR 15 MIN (OPTIONAL) AND ADD IT TO THE INSTANT POT. ADD 3 CUPS OF WATER
    Step 1
  • ADD A TSP OF CUMIN SEEDS & 2 GARLIC CLOVES TO THE DAL
    Step 2
  • CLOSETHE LID AND SET THE WHISTLE TO SEALING MODE.
    Step 3
  • SET MANUAL/MULTIGRAIN FOR 15 MIN. ONCE DONE, LET THE PRESSURE RELEASE NATURALLY
    Step 4
  • BLEND THE DAL WITH A HAND BLENDER AND TRANSFER THE DAL INTO A BOWL
    Step 5
  • RINSE THE POT AND SET THE INSTANT POT TO SAUTE MODE
    Step 6
  • ONCE HOT ADD OIL,MUSTARD SEEDS, CUMIN SEEDS, RED CHILIES, CRUSHED GARLIC, CURRY LEAVES& HING
    Step 7
  • ADD THE VEGGIES . YOU CAN USE ANY VEGGIES OF YOUR CHOICE. I USED ONIONS, CARROTS, CHILIES, OPO, DRUMSTICK, TOMATOES
    Step 8
  • GIVE THEM A STIR. ADD TURMERIC POWDER, CHILI POWDER, SALT, SAMBAR POWDER AND MIX WELL . SAUTE  FOR 2 MIN

  • ADD COOKED DAL ,4 TBSP OF TAMARIND PUREE AND 3 CUPS OF WATER

  • ADD 1 TBSP OF JAGGERY, 1 TBSP OF COCONUT POWDER AND CILANTRO

  • GIVE THEM A STIR& ADJUST THE SEASONING IF REQUIRED

  • CLOSE THE LID AND SET THE WHISTLE TO SEALING MODE. CANCEL SAUTE MODE & SET MANUAL/ PRESSURE COOK FOR 3 MIN

  • ONCE DONE, QUICK RELEASE AND OPEN THE LID

  • INSTANT POT SAMBAR IS READY. SERVE IT WITH WHITE RICE OR AS A SIDE DISH FOR IDLY/ DOSA / VADA
