Soak chana dal (optinal) for 1hour, wash & drain the water. Add 3 cups of water and pressure cook for 3 whistles.
Once the pressure cooker cools down, open the lid and drain the excess water and blend the dal using a hand blender or a mixer into a smooth paste.
Add jaggery to the dal mixture and let it cook until the mixture thickens .
Add cardamom powder and let it cool completely.
Make them into golf size balls and keep them aside.
To the all purpose flour , add salt & hot oil . Using a spoon , mix the hot oil into the flour. once its cool , use water to mix the dough with your hand and make it into a soft dough. Add oil on top of the dough and soak it for 1 hour.
Take a ball of dough & flatten it with your hands. place the stuffing in the middle and close the dough from all sides removing the extra dough.
Flatten it with a rolling pin using some flour for dusting. Spread it as thin or as thick to your preference
Heat a tawa or a griddle. Spread some ghee and add the poli to he tawa. Fry it on both sides using generous amount of ghee until its cooked through like a roti.
Repeat the process until you finish all the puran polis.
Serve them with extra ghee .
