Aloo besan curry just reminds us the hotel style curry that goes well with poori/ roti. This is served as a side dish in many places with deep fried Indian flat breads puffed and golden brown. Poori is usually made of wheat flour mixed with salt & water into a stiff dough ,rolled into flat breads and deep fried in the hot oil till puffed & golden brown.
This Aloo curry with besan has a unique taste and can be done in different variations. some make only with potatoes & besan and some with onions and potatoes & skip the besan. Its totally up to our preference.
You can make this curry with potatoes boiled and then adding to the curry saves you time and the curry can be made in no time. Sautéing the onions lightly leaves a crunchy texture to the curry which tastes good with poori’s.
Aalo Besan Curry

pressure cooker for cooking the potatoes for 2 whistles
Ingredients
3pcspotatoes (medium size)boiled
2pcsonions (medium size)sliced
1/4cuppeasFrozen/ Fresh
1/4cupcarrotdiced
4pcschilliessplit in half
curry leaves
cilantro
1/2 tspturmeric
salt
4tbspsoil
2tbspChana dal
1tbspurad dal
1tspmustard seeds
1tspcumin seeds
1pcdry red chillies
3tbspbesan
Instructions
Add oil into a pan and add the chana dal, urad dal, mustard seeds, cumin seeds, dry red chillies and let them fry a bit & add sliced onions, green chillies ,curry leaves.
Fry them for 10min. Dont saute the onions for too long, as they become too soft. Add salt & turmeric powder, diced carrot and fry for 2min.
Add boiled potato chunks & green peas. mix well. Now add 2 cups of water & let it boil for 5-10min.
Add water to the besan & mix well without any lumps. Now gradually add the besan mixture to the curry stiring with a spoon.
Add chopped cilantro and wait for the curry to thicken.
