Cauliflower Crust Pizza
This cauliflower crust pizza recipe is a low carb, keto friendly and tastes almost the same as regular pizza that you will never miss your regular pizza. Using cauliflower as the main ingredient, eggs & cheese act as a binding agent to form the crust. This crust forms the crispy edges which everyone fights for and tastes delicious with your favorite toppings.
This cauliflower crust pizza is a healthy veggie option pizza which is gluten free and grain free. It’s perfect for people who want to eat pizza while still following their low carb diet.
Making cauliflower crust is little time consuming when you are making it with fresh cauliflower. cutting the cauliflower and pulsing in the food processor to make a rice like texture and steaming it and squeezing the water out. You can make your life easy by using pre-riced cauliflower either fresh or frozen. many stores are selling these now a days. You can even buy the cauliflower florets in the frozen section, so that you can skip the cutting process which saves you some time.
How to make cauliflower crust
Making cauliflower crust is easy but a little labor intensive. When you are making it with fresh cauliflower, pulse the florets into rice like texture and steam it until tender. You can even use pre-riced cauliflower fresh or frozen for this recipe.
Once you riced and steamed the cauliflower, you need to squeeze out the water that cauliflower naturally contain. This step helps you to get a non-soggy crust. Once the cauliflower rice is ready, you can mix it with the egg, salt, pepper, garlic powder, parmesan cheese or mozzarella cheese and even some herbs and spread it into a disc on a baking sheet lined with parchment paper. Spread it as thin or as thick up to your preference.

Don’t worry if your rice looks too big in texture as the egg and cheese helps to bind the rice into a pizza crust. I don’t like my rice to be too mushy, so I pulse it a little grainy. Just use your hands to spread the rice and shape the crust.
Bake it until the crust is dry and golden brown on both sides. Some recipes call for flipping the pizza but I never flip mine. It might take a few more minutes to get that golden color on both sides. It’s up to your preference. Don’t forget to use the parchment paper as it helps in sliding out the pizza so easily.
Using frozen pre-riced cauliflower-
Many stores are even selling the frozen pre-riced cauliflower which will even save you more time when you are in a hurry. Whether you choose to use fresh or frozen this crust comes out good. I tried using frozen cauliflower rice many times and its totally fine. So, this recipe is really flexible.
TOPPINGS-
When you are forming a pizza use your favorite toppings and make sure you don’t get too much moisture on the pizza. Even the sauce has to be minimal. Making the pizza sauce at home gives you the flexibility to make the sauce little thicker. I will try to upload a video on making homemade pizza sauce. Once the sauce is done, use some mozzarella cheese and your favorite toppings, some chili flakes and fresh basil leaves and bake it again until the cheese is melted.
Cauliflower crust pizza is ready. With a few tips you can make it at home easily and enjoy it while it’s still hot.
Freezing the cauliflower crust-
As making the cauliflower crust is labor intensive, I would love to double the recipe and make more pizza crusts or smaller individual ones for future, so that it comes in handy on a weekday or weekend dinner. You can store the baked crusts in a zip lock or an airtight container by adding a small parchment paper in between them. That way when you are ready to make a pizza, simply throw a crust in the oven at 400 degrees Fahrenheit for 10min or just until its heated through.
Now place your favorite toppings and place it another 5-10min or until the cheese is bubbling.

Cauliflower crust pizza
Equipment

Ingredients
- 4 cups Shredded Cauliflower
- 2 Eggs
- 2 cups Shredded parmesan cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- Shredded mozzarella cheese
- 1 cup pizza sauce
- 1/4 cup Diced green bell peppers
- 1/4 cup Diced yellow bell peppers
- 1/4 cup Sliced cherry tomatoes
- 1/4 cup Sliced black olives
- 1/4 cup Chopped onions
- 1/4 cup Sliced jalapenos
- Fresh basil leaves
- Chili flakes
Instructions
- Take a cauliflower and cut it into florets/ chunks. Wash them well .
- Break the cauliflower florets and pulse in a food processor until fine. You can also use readymade cauliflower rice.
- Steam the cauliflower in a microwave or in a pan for 7min or until the moisture is gone and looks dry. Squeeze out excess water using a napkin or muslin cloth.
- Preheat the oven to 400°F
- Line a baking pan with parchment paper
- Combine 2 eggs , salt, pepper, garlic powder, Shredded parmesan/ mozzarella and the cauliflower rice.
- Transfer it to the center of the baking sheet and spread it into a circle resembling a pizza crust. ( This recipe makes 2 crusts)
- Bake it in a preheated oven for 20min
- Remove the Crust from the oven and let it cool a bit. Now add the homemade pizza sauce , shredded mozzarella and your favourite toppings and bake it for an additional15min.
- Top it off with chili flakes and fresh basil leaves.
