Set the instant pot on saute mode
Add 4tbsps of oil or as required and let it heat for a 3min. Add whole spices ( cinnamon, cloves, cardamom, bay leaf ) and saute for a min.
Add onions and green chillies and saute until golden brown. Add turmeric & ginger garlic paste and fry them for a min.
Add chicken pieces & a chopped tomato , salt to taste and mix it well. cover it with a lid & saute for 5min.
Stir couple of times whie the chicken is cooking and add red chilli powder. Add a cup of water & mix well.
Close the lid & cancel the saute mode. set on poultry mode for 5min. Open the lid after natural pressure release.
Turn on saute mode and add cashew paste , chicken masala and mix well. Let the gravy thicken until your desired consistency for 5-10min.
Add cilantro , garam masala & mix well.
Chicken curry is ready to be served with rice/roti/ poori/ vada/ pulkhas/ naan.
