Mint rice/Pudina rice is so simple, refreshing and flavorful, and easy to make with mint as the main ingredient. It’s a good recipe for a lunch box as well.
Using whole garam masala like cinnamon & cloves, bay leaf gives a nice fragrance to the rice. It can also be done as a one-pot dish where you can add rice & water to the tadka and cook with it rather than cooking the rice separately. I like to cook the rice first and then toss it in the tadka. This way the rice turns out fluffy & light.
Adding cashews & some fried onions gives a nice crunchiness to the rice. This rice can be done in no time and it’s a great recipe for potlucks & lunch boxes.
Tip: Just toss your cooked rice into the fridge for an hour or two, so that the rice doesn’t break while tossing.

MINT RICE
This mint rice or pudina rice is so simple, refreshing and flavorful with the aroma of spices & mint that goes into the rice. adding some cashews & fried onions to the dish gives the extra crunchiness when u bite into them. The chilies add a nice spiciness to the rice which keeps you going back for more if you like spicy like me.
Heat up a non stick pan or kadai and add oil & ghee. When the oil is hot, add cinnamon, cloves, saahi jeera, bay leafs & star anise and fry them for 2min.
Add cashews and fry them until golden brown. Now add red chilies, sliced onions & green chilies. Fry them for few minutes. Add ginger garlic paste & fry for few min.
In a blender, add the mint leaves with little water & make it into a paste. ( U can add green chilies to the mint if u don't want them to be seen in the rice)
To the pan , add some fresh mint leaves & the grinded paste and fry for 5minutes. Add salt as per taste.
Now add a cup of cooked rice , some fried onions and mix them well until the rice is well combined with the paste.
Add garam masala, some more fresh mint leaves & toss it well. Turn off the heat. Mint rice is ready to be served.
