Pineapple Fried Rice (Thai)
Pineapple Fried Rice (Thai) is one of my tasted and tested versions of the many existing Thai style Fried rice recipes. This dish comes together in no time when you have all the ingredients ready and you can toss it in a ziff.
The secret to any fried rice recipe is the rice that goes in it. It is always good to use a day-old rice. It doesn’t mean that u can’t use fresh cooked rice. The point is when you toss hot rice with any vegetables, there is a chance of the rice breaking or fried rice turning mussy. If you have time, cook the rice ahead and let it cool. you can even keep the rice in the fridge for 2 hours. You can use any rice you prefer.

Note: The rice needs to be cooled. Preferably a day old rice or you can keep the rice in the fridge for 2 hours for best results. Not only this fried rice but for any other fried rice. In that way when you toss the rice it doesn’t break.

Pineapple fried rice
Equipment
- Chinese wok
Ingredients
- 10-12 pcs Peeled and deveined jumbo shrimp
- 1 pc Pineapple You will need 1 cup pieces for fried rice
- 5 tbsp Cooking oil
- 3 Tbsps Soy sauce
- ¼ tsp White pepper
- 1 tbsp fish sauce
- 1 tbsp Oyster sauce
- 1 Tbsp Sugar
- 1/2 tsp curry powder
- salt
- 3 pcs Eggs
- 5 Cloves Garlic Chopped
- 1/2 inch Ginger chopped
- 3 pcs Thai chillies chopped Optional
- ¼ cup Chopped carrot
- ¼ Cup Chopped green beans
- 4 Cups Cooked & cooled ½Rice Preferably jasmine rice
- ¼ Cup Green onions chopped
Instructions
- In a bowl add a 1/8th tsp white pepper and a teaspoon of soy sauce to the shrimp and mix well.
- In a different bowl add 2 tbsps of soy sauce, 1tbsp of fish sauce, 1 tbsp of oyster sauce, 1/2 tsp of curry powder, 1 tbps of sugar (optional) 1/8th tsp of pepper and mix well.
- Cut the pineapple in to half length wise and scoop out all the pieces. We are gonna use a cup of pineapple pieces for our fried rice. ( get a pineapple that is firm . not too ripe)
- Beat the eggs in to a bowl with little salt and pepper
- Heat a wok with a tbsp of oil. add the egg mixture and cook them into a soft omlet and keep it aside.
- Add a tbsp of oil and add the marinated shrimp and cook them for 3-4min. do not over cook the shrimp. Take them out. ( The Shrimp should have a nice crust on the outside , but juicy on the inside)
- Now add 3tbsps of oil and add the chopped garlic, ginger and green chillies and saute them for a min. Add chopped carrots, green beans, and fry them for 2min. Add the cooked and cooled rice and sauce mixture and give it a good toss. Note: The rice needs to be cooled . In that way when you toss the rice it doesnt break.
- Add the pineapple pieces (bite size) and mix well.
- Now add the cooked shrimp and the omlet and green onions and mix well.
- Check seasoning and add salt if needed. Careful with the salt as all the sauces that we added have salt in them.
- Pine apple fried rice is ready. Serve hot
