Puran Poli – Bobatlu

                  Puran poli is a sweet Indian flat bread stuffed with sweet filling using chana dal & jaggery and lots of ghee. Puran poli is a maharashtrian dish popularly made during ganesh chaturdi or holi or guru padwa or any festive season. Its popularly known as Bobattu in South India usually made during ugadi festival.

                   There are different versions where , some people use wheat flour and also coconut as stuffing. I used All purpose flour and chana dal ( bengal gram) and jaggery for sweetness. Cardamam powder is mixed at the end to have that nice aroma to the stuffing.

It can made and stored in the refrigerator and serve it warm with lots of ghee. It tastes better when served with ghee or clarifiied butter. I made it in a large quantity , but u can always cut the recipe into half or even smaller. Do try it and let me know how it turned out for you.

Ingredients

  • 3 cups Chana dal
  • 4 1/2 cups Jaggery
  • 6 cups All purpose flour
  • 1 tsp Cardamam powder
  • 1/2 tsp Salt
  • As required Ghee/ Clarified butter
  • 4 tbsp hot oil
  • 1 cup All purpose flour For dusting

Instructions

  • Soak chana dal (optinal) for 1hour, wash & drain the water. Add 3 cups of water and pressure cook for 3 whistles.

  • Once the pressure cooker cools down, open the lid and drain the excess water and blend the dal using a hand blender or a mixer into a smooth paste.

  • Add jaggery to the dal mixture and let it cook until the mixture thickens .

  • Add cardamom powder and let it cool completely.

  • Make them into golf size balls and keep them aside.
  • To the all purpose flour , add salt & hot oil . Using a spoon , mix the hot oil into the flour. once its cool , use water to mix the dough with your hand and make it into a soft dough. Add oil on top of the dough and soak it for 1 hour.

  • Take a ball of dough & flatten it with your hands. place the stuffing in the middle and close the dough from all sides removing the extra dough.

  • Flatten it with a rolling pin using some flour for dusting. Spread it as thin or as thick to your preference

  • Heat a tawa or a griddle. Spread some ghee and add the poli to he tawa. Fry it on both sides using generous amount of ghee until its cooked through like a roti.

  • Repeat the process until you finish all the puran polis.

  • Serve them with extra ghee .
